It’s never too late in the year to enjoy the deliciously awesome taste and health benefits of the almighty coconut. You read that right; all hail the almighty coconut. Firstly, the water inside the coconut is packed with potassium (one heck of an important electrolyte that helps prevent muscle cramps and helps to keep you hydrated) while the fleshy white “meat” is packing some protein and lots of fiber. If you can’t get access to fresh young coconuts at your local grocer, then by all means opt for the organic shredded coconut (unsweetened) either dry or frozen.
1/4 cup Coconut Flour (either prepackaged ie. Bobs Red Mill, or by milling your own – directions to follow)
1 large frozen Banana
1 medium Orange, using juice and zest
8oz Coconut Water, chilled
(Optional: Vegan/Vegetarian Protein Powder)
If creating your own Coconut Flour – Measure 1/4 cup of shredded coconut flakes and add to a NutriBullet cup, using the Milling Blade, pulse 2-3 secs and stop, repeat until a fine powder forms. Be careful not to over process or mixture will clump as fatty-acids are released.
Place all remaining items into NutriBullet or blender and process until smooth using Mixing Blade. (vegan/vegetarian/paleo/gluten-free friendly!) Makes approx 16oz serving size, approx 200-300 calories. Enjoy!
