Quinoa is a low-glycemic grain, so while the strawberries and peaches give you that quick burst of fructose, the quinoa will slowly breakdown and curb your sweet-tooth until your next big meal. Or, if you’re like me and going for a morning run after breakfast, this meal provides the energy to just keep going!
Some people can just hop out of bed and run for miles; while I, on the other hand, just can’t run on an empty stomach, literally. If I don’t eat before running in the morning, I will devour the first thing I find in my kitchen when I get back….I don’t care what it is. Donuts, cookies, cereal, namely anything not nailed down to the counter top is fair game.
This recipe is completely vegan/vegetarian friendly, and naturally gluten-free.
Red Quinoa with Strawberries and Peaches
prep time: 8 mins cook time: 20mins
recipe makes 1-serving (216 cals)
1/4 cup dry Red Quinoa
3/4 cup water
1/2 cup fresh or frozen peaches, diced into pieces
1/4 cup fresh or frozen strawberries, diced into pieces
Stove top method: Bring 3/4 cup of water to a boil, add quinoa. Cover and reduce heat to simmer, allow to sit covered for 20 minutes. Quinoa is completely cooked when doubled in size and tender. Fluff before serving. Makes 1/2 cup cooked.

While quinoa is cooking, slice and dice the peaches and strawberries and set aside. Once the quinoa is completely cooked, combine with fruit, and serve! I like mine warm, so all the fruit flavors mix and sweeten the grains.
